Tuscan White Bean Soup

A warm, hearty soup featuring turkey bacon and white beans, perfect for chilly days.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • 2 cups chopped kale
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add olive oil, onions, and garlic to the pot, sauté until softened.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add white beans, thyme, and rosemary. Reduce heat and simmer for 20 minutes.
  5. Stir in kale and chopped turkey bacon, cook for an additional 5 minutes.
  6. Season with salt and pepper before serving.
