  • 4 medium pumpkins
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top off each pumpkin and scoop out the seeds.
  3. In a skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
  4. Add the ground turkey and cook until browned.
  5. Stir in the cooked rice, sage, salt, pepper, and parmesan cheese.
  6. Fill each pumpkin with the turkey mixture.
  7. Place in a baking dish and add a little water to the bottom.
  8. Bake for 40-50 minutes, until the pumpkins are tender.
  9. Serve warm.
