- 4 medium pumpkins
- 1 pound ground turkey
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh sage, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated parmesan cheese
- 1 tablespoon olive oil
- Preheat the oven to 375°F (190°C).
- Cut the top off each pumpkin and scoop out the seeds.
- In a skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
- Add the ground turkey and cook until browned.
- Stir in the cooked rice, sage, salt, pepper, and parmesan cheese.
- Fill each pumpkin with the turkey mixture.
- Place in a baking dish and add a little water to the bottom.
