Sweet Potato Gratin with Smoked Gouda and Rosemary

A rich and creamy sweet potato gratin featuring the delicious combination of smoked gouda and fresh rosemary.

  • 2 pounds sweet potatoes
  • 1 cup smoked gouda cheese, shredded
  • 1 cup heavy cream
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes.
  3. In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add garlic and rosemary, cooking for another minute.
  5. In a greased baking dish, layer the sweet potatoes, onion mixture, and smoked gouda.
  6. Pour heavy cream evenly over the layers.
  7. Season with salt and pepper.
  8. Bake for 45 minutes or until the sweet potatoes are tender and the top is golden.

Notes

  • Let the gratin rest for 10 minutes before serving.
  • For a crispy top, broil for an additional 2-3 minutes.
