  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese
  • 6 slices turkey bacon
  • 4 sandwich buns
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard

Instructions

  1. In a bowl, mix sweet corn, flour, eggs, baking powder, salt, and pepper until combined.
  2. Heat oil in a skillet over medium heat. Drop spoonfuls of the mixture to form fritters. Cook until golden brown on each side.
  3. In another pan, cook turkey bacon until crispy.
  4. Spread mayonnaise and mustard on sandwich buns, then layer with fritters and bacon.
  5. Top with cheese and serve immediately.
