  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/2 cup cold unsalted butter, diced

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.
  4. Pour the cream cheese mixture over the crust and layer strawberries on top.
  5. In a separate bowl, combine flour, brown sugar, oats, cinnamon, and diced butter to create the crumble.
  6. Sprinkle the crumble evenly over the strawberries.
  7. Bake for about 50 minutes or until set. Cool before serving.
