Sticky Apple Cider Chicken with Crisp Autumn Slaw

This Sticky Apple Cider Chicken is an easy recipe that pairs perfectly with a crisp autumn slaw for a delightful fall meal.

  • 4 pieces chicken thighs
  • 1 cup apple cider
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups shredded cabbage
  • 1 cup grated carrots
  • 2 tbsp apple cider vinegar
  • 2 tbsp mayonnaise
  • 1/2 tsp celery seed

Instructions

  1. In a bowl, mix apple cider, soy sauce, honey, garlic powder, salt, and pepper.
  2. Place chicken thighs in a zip-lock bag and pour marinade over them. Seal and refrigerate for at least 1 hour.
  3. Preheat oven to 375°F (190°C). Transfer chicken with marinade to a baking dish.
  4. Bake for 30-35 minutes until the chicken is cooked through.
  5. While the chicken is baking, in a large bowl, combine cabbage, carrots, apple cider vinegar, mayonnaise, and celery seed. Toss to combine.
  6. Serve chicken hot with the slaw on the side.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Feel free to add other vegetables to the slaw such as bell peppers or onions.
