  • 4 boneless chicken breasts
  • 2 cups long-grain white rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 cups mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the cream of chicken soup, chicken broth, and sour cream together until well combined.
  3. In a baking dish, layer the rice, followed by the mixed vegetables.
  4. Place the chicken breasts on top of the vegetables and season with garlic powder, onion powder, salt, and pepper.
  5. Pour the soup mixture over the chicken and cover the dish with aluminum foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the chicken is cooked through.
