  • 1 cup pumpkin puree
  • 1 cup white chocolate chips
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla, and mix until well blended.
  4. Stir in the pumpkin puree.
  5. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the pumpkin mixture and mix until just combined.
  7. Fold in the white chocolate chips.
  8. Drop rounded tablespoons of dough onto a baking sheet.
  9. Bake for 12-15 minutes or until the edges are golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • For extra flavor, add a pinch of cloves or ginger.
