  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a large bowl, combine pumpkin puree, eggs, and milk.
  3. In another bowl, mix the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
