These Pumpkin Cheesecake Bars with Streusel are a perfect fall dessert that combines rich pumpkin cheesecake with a crunchy topping.

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a greased baking dish.
  3. In another bowl, combine pumpkin puree, cream cheese, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  4. Pour the pumpkin mixture over the crust in the baking dish.
  5. In a separate bowl, mix brown sugar, flour, oats, and nuts for the streusel topping, then sprinkle over the cheesecake layer.
  6. Bake for 45-50 minutes or until set.
  7. Allow to cool before cutting into bars.
