  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (optional)
  • ½ cup brown sugar (for streusel)
  • ¼ cup all-purpose flour (for streusel)
  • ½ teaspoon ground cinnamon (for streusel)
  • 2 tablespoons butter, melted (for streusel)
  • ¼ cup maple syrup (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, baking soda, salt, and spices.
  3. In another bowl, combine the pumpkin puree, sugar, oil, eggs, and vanilla.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. If using, stir in the chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. In a separate bowl, mix the streusel ingredients and sprinkle on top of the batter.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. While the bread is cooling, whisk together the glaze ingredients.
  10. Drizzle the glaze over the cooled pumpkin bread before serving.

Notes

  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
