Pastina Soup

A warm and inviting bowl of pastina soup that combines the flavors of turkey bacon and fresh vegetables.

Ingredients

  • 1 cup pastina
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 cup spinach, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. Add olive oil, onion, carrots, and celery to the pot, sautéing until vegetables are tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add pastina and thyme, cooking until the pastina is tender.
  5. Stir in chopped spinach and the crumbled turkey bacon. Season with salt and pepper.
  6. Serve warm and enjoy!
