  • 8 ounces ditalini pasta
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 can (15 ounces) cannellini beans, drained
  • 1 can (15 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add olive oil, onion, carrot, and garlic; sauté until softened.
  3. Add the chicken broth, tomatoes, beans, and Italian seasoning; bring to a boil.
  4. Stir in the pasta and cook until al dente, about 10 minutes.
  5. Stir in the crumbled bacon. Season with salt and pepper before serving.

Notes

  • For added flavor, let the soup sit for a while before serving to allow the flavors to meld.
  • This can also be made vegetarian by omitting the bacon and using vegetable broth.
