- 1 pound turkey bacon
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 4 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 6 cups chicken or vegetable broth
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup small pasta (like ditalini)
- 1 cup chopped spinach
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add onion, carrots, and celery to the pot and sauté until tender, about 5 minutes.
- Stir in garlic and cook for an additional minute.
- Add the crumbled bacon, beans, crushed tomatoes, broth, Italian seasoning, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
