  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)

Instructions

  1. In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches 260°F (hard-ball stage).
  2. While the sugar mixture is cooking, beat the egg whites in a large bowl until stiff peaks form.
  3. Once the sugar mixture is ready, slowly pour it into the beaten egg whites while mixing continuously.
  4. Add vanilla extract and mix until the mixture is thick and glossy.
  5. Fold in chopped nuts if desired.
  6. Drop spoonfuls of the mixture onto waxed paper and let them cool completely.

Notes

  • Make sure to use a candy thermometer for accuracy.
  • Humidity can affect the texture, so make on a dry day if possible.
