  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Add ground chicken, oregano, salt, and pepper; cook until the chicken is browned.
  5. Mix in olives and feta cheese, and cook until heated through.
  6. Garnish with parsley before serving.

Notes

  • For added flavor, consider adding a squeeze of lemon juice before serving.
  • This dish can also be served over zucchini noodles or cauliflower rice for a complete meal.
