  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups spinach
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, sauté onions, garlic, carrots, and celery until soft.
  2. Add chicken breasts and chicken broth; bring to a boil.
  3. Reduce heat and let simmer for 20-25 minutes, or until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Add thyme, salt, pepper, and heavy cream; stir well.
  6. Add spinach and let cook for an additional 5 minutes.
  7. Stir in lemon juice before serving.
