  • 1/2 cup turkey bacon, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add chopped onion and minced garlic to the pot, cooking until translucent.
  3. Peel and dice the potatoes, then add them to the pot along with chicken broth. Bring to a boil and simmer until the potatoes are tender.
  4. Stir in heavy cream and season with salt and pepper. Use an immersion blender to blend the soup to desired consistency.
  5. Serve hot, topped with cheddar cheese and green onions.
