  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 cup spinach, chopped
  • 1 cup cooked quinoa

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add carrots, celery, and onions to the pot. Sauté for about 5 minutes until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add chicken broth, diced tomatoes, thyme, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in the spinach and quinoa, cooking until spinach wilts.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • You can substitute turkey bacon with regular bacon if desired.
