- 4 slices turkey bacon
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 cup spinach, chopped
- 1 cup cooked quinoa
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add carrots, celery, and onions to the pot. Sauté for about 5 minutes until softened.
- Stir in the garlic and cook for another minute.
- Add chicken broth, diced tomatoes, thyme, and black pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in the spinach and quinoa, cooking until spinach wilts.
- Serve hot, garnished with crumbled turkey bacon.
