High Protein Lasagna Soup

Enjoy a wholesome twist on traditional lasagna with this high protein lasagna soup featuring turkey bacon.

Ingredients

  • 1 pound turkey bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 2 cups zucchini, chopped
  • 8 ounces lasagna noodles, broken
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and crumble.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the diced tomatoes, chicken broth, and zucchini. Bring to a boil.
  4. Stir in the broken lasagna noodles and cook until tender.
  5. Remove from heat and stir in ricotta cheese, and top with mozzarella and Parmesan.
  6. Garnish with crumbled turkey bacon and serve hot.

Notes

  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • Add more vegetables for extra nutrition.
