- 1 pound turkey bacon
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 6 cups chicken broth
- 2 cups zucchini, chopped
- 8 ounces lasagna noodles, broken
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons Italian seasoning
- Cook the turkey bacon in a large pot until crispy, then remove and crumble.
- In the same pot, sauté the onion and garlic until translucent.
- Add the diced tomatoes, chicken broth, and zucchini. Bring to a boil.
- Stir in the broken lasagna noodles and cook until tender.
- Remove from heat and stir in ricotta cheese, and top with mozzarella and Parmesan.
- Garnish with crumbled turkey bacon and serve hot.

- This soup can be made ahead and stored in the fridge for up to 3 days.
