  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground turkey over medium heat until browned.
  4. Stir in quinoa, diced tomatoes, garlic powder, onion powder, and Italian seasoning.
  5. Stuff the mixture into the bell peppers and place them in a baking dish.
  6. Sprinkle the cheese on top of each stuffed pepper.
  7. Bake for 25-30 minutes until the peppers are tender.

  • For a vegetarian option, substitute the ground turkey with black beans or lentils.
