Greek Chicken Bowls

  • 1 pound chicken breast
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, oregano, salt, and pepper. Add chicken breast and coat well.
  3. Place chicken on a baking sheet and bake for 25-30 minutes or until fully cooked.
  4. In a large bowl, combine cooked quinoa, tomatoes, cucumber, red onion, feta cheese, and olives.
  5. Once the chicken is cooked, slice it and add to the bowl.
  6. Drizzle with lemon juice and mix well.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Add more vegetables according to preference.
