Gingerdoodle Cookies

These Gingerdoodle Cookies are a delightful blend of ginger and snickerdoodle, perfect for festive occasions.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup additional sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll dough into balls and then roll in the additional sugar.
  7. Place on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  8. Allow to cool slightly on the baking sheet before transferring to a wire rack.

Notes

  • For a spicier flavor, add more ginger or cinnamon.
  • These cookies can be stored in an airtight container for up to a week.
