  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 lime, juiced
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced chicken and cook until browned.
  2. Pour in the chicken broth and coconut milk, then add the red curry paste and fish sauce. Stir to combine.
