  • 1 can (14 oz) coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup mushrooms, sliced
  • 1 cup bell pepper, sliced
  • 1 cup fresh spinach
  • 2 green onions, chopped
  • 1 tablespoon fresh cilantro, for garnish

Instructions

  1. In a large pot, combine chicken broth and coconut milk. Bring to a simmer over medium heat.
  2. Add red curry paste, fish sauce, and lime juice. Stir until well combined.
  3. Add mushrooms and bell peppers. Cook until vegetables are tender, about 5-7 minutes.
  4. Add shredded chicken and spinach. Simmer for an additional 3-5 minutes until heated through.
  5. Serve hot, garnished with green onions and cilantro.

Notes

  • Feel free to substitute shrimp or tofu for the chicken.
