- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 cup mushrooms, sliced
- 1 cup bell pepper, sliced
- 1 cup fresh spinach
- 2 green onions, chopped
- 1 tablespoon fresh cilantro, for garnish
- In a large pot, combine chicken broth and coconut milk. Bring to a simmer over medium heat.
- Add red curry paste, fish sauce, and lime juice. Stir until well combined.
- Add mushrooms and bell peppers. Cook until vegetables are tender, about 5-7 minutes.
- Add shredded chicken and spinach. Simmer for an additional 3-5 minutes until heated through.
- Serve hot, garnished with green onions and cilantro.
Notes
