  • 1 can diced tomatoes
  • 1 cup heavy cream
  • 2 cups seafood broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 bell pepper, chopped
  • 1 cup corn, frozen or fresh

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and bell pepper, cooking until they are tender.
  3. Stir in the garlic, chili powder, and cumin, cooking for another minute.
  4. Add the diced tomatoes and seafood broth, bringing the mixture to a simmer.
  5. Once simmering, add the shrimp and corn, cooking until the shrimp is opaque.
  6. Finally, stir in the heavy cream and heat through before serving.
