Easy Chorizo Breakfast Casserole

Ingredients

  • 1 pound chorizo sausage
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 6 large eggs
  • 2 cups shredded cheese
  • 4 cups cubed bread
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the chorizo over medium heat until browned, then add onion and bell pepper, cooking until softened.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Add the bread cubes to the skillet and mix with the chorizo, onion, and bell pepper.
  5. Pour the egg mixture over the bread and sausage mixture, then sprinkle with cheese.
  6. Bake for 30-35 minutes, or until the eggs are set and the top is golden.
