Easy Baked Breakfast Potatoes

Ingredients

  • 4 medium potatoes
  • 6 slices turkey bacon
  • 1 cup bell peppers, chopped
  • 1 cup onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Toss the potatoes with olive oil, garlic powder, salt, and pepper.
  4. Spread the potatoes on a baking sheet and bake for 25 minutes.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop.
  6. Add the vegetables to the baking sheet with potatoes and mix.
  7. Sprinkle the bacon over the top and bake for an additional 15 minutes.
  8. Serve warm.
