  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup espresso or strong coffee
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar, brown sugar, espresso, oil, egg, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra chocolate kick, add more chocolate chips.
  • These muffins pair well with a cup of coffee or milk.
