- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup espresso or strong coffee
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup chocolate chips
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the sugar, brown sugar, espresso, oil, egg, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
