Decadent Spiced Pumpkin Cheesecake with Whipped Cream

  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the cream cheese and powdered sugar until smooth. Add the pumpkin puree, eggs, vanilla, and spices, and mix until well combined.
  4. Pour the pumpkin mixture over the crust and smooth the top.
  5. Bake for 60 minutes or until the center is set. Allow to cool completely before refrigerating.
  6. Whip the heavy cream and top the cheesecake before serving.
