- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1/2 cup fresh basil, chopped
- 8 ounces pasta (optional)
- Place the chicken breasts at the bottom of the crockpot.
- Add the chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or until chicken is tender.
- Remove the chicken, shred it, and return it to the crockpot.
- Stir in the heavy cream and Parmesan cheese, cooking for an additional 30 minutes.
- If using pasta, cook it separately and add to the soup before serving.
- Garnish with fresh basil before serving.
