  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 cup fresh basil, chopped
  • 8 ounces pasta (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or until chicken is tender.
  4. Remove the chicken, shred it, and return it to the crockpot.
  5. Stir in the heavy cream and Parmesan cheese, cooking for an additional 30 minutes.
  6. If using pasta, cook it separately and add to the soup before serving.
  7. Garnish with fresh basil before serving.

Notes

  • For a vegetarian version, substitute the chicken with chickpeas.
  • This soup can be made ahead of time and stored for later use.
