Crispy Smashed Potato Salad

A delightful twist on a classic dish, featuring crispy smashed potatoes and savory turkey bacon.

Ingredients

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Preheat the oven and cook the turkey bacon until crispy.
  3. Drain the potatoes and let them cool slightly.
  4. Smash each potato gently with a fork or potato masher.
  5. Arrange the smashed potatoes on a baking sheet and bake until crispy.
  6. In a bowl, mix mayonnaise, apple cider vinegar, and Dijon mustard.
  7. Add the crispy bacon, green onions, and parsley to the bowl and stir to combine.
  8. Once the potatoes are crispy, remove them from the oven and toss them in the dressing mixture.
  9. Season with salt and pepper and serve warm or at room temperature.

Notes

  • For a spicier version, add chopped jalapeños to the salad.
  • Can be made a day ahead and served cold.
