Crispy Smashed Potato Salad

A deliciously unique take on potato salad featuring crispy smashed potatoes, turkey bacon, and chicken ham.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup green onions, sliced
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, boil the baby potatoes until fork-tender, then drain and let cool slightly.
  2. While the potatoes cool, cook the turkey bacon until crispy, then chop into small pieces.
  3. Preheat the oven to 450°F (230°C).
  4. Once cooled, gently smash the potatoes on a baking sheet and drizzle with olive oil, salt, and pepper.
  5. Bake in the preheated oven for 20-25 minutes or until crispy.
  6. In a large bowl, combine the smashed potatoes, turkey bacon, chicken ham, mayonnaise, Dijon mustard, green onions, and garlic powder. Mix well.
  7. Adjust seasoning with salt and pepper to taste.
  8. Serve warm or at room temperature.

Notes

  • For extra crunch, you can bake the potatoes longer.
  • Vegan options can substitute the mayonnaise with a plant-based version.
