Crispy Smashed Potato Salad

A delicious and unique take on potato salad, featuring crispy smashed potatoes, turkey bacon, and chicken ham.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the baby potatoes until tender, then drain and let cool slightly.
  2. Preheat the oven to 425°F (220°C).
  3. Transfer potatoes to a baking sheet and gently smash each potato.
  4. Cook the turkey bacon in a skillet until crispy and crumble it.
  5. Brush the smashed potatoes with olive oil, season with salt and pepper, and roast in the oven until golden brown, about 25-30 minutes.
  6. In a bowl, mix sour cream, mayonnaise, Dijon mustard, garlic powder, and green onions.
  7. Once the potatoes are crispy, toss them in the dressing and add the crumbled turkey bacon and chicken ham.
  8. Serve warm or at room temperature.

Notes

  • For extra flavor, feel free to add herbs like dill or parsley.
  • This salad can be made a day ahead and stored in the refrigerator.
