- 2 pounds baby potatoes
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Boil the baby potatoes until tender, then drain and let cool slightly.
- Preheat the oven to 425°F (220°C).
- Transfer potatoes to a baking sheet and gently smash each potato.
- Cook the turkey bacon in a skillet until crispy and crumble it.
- Brush the smashed potatoes with olive oil, season with salt and pepper, and roast in the oven until golden brown, about 25-30 minutes.
- In a bowl, mix sour cream, mayonnaise, Dijon mustard, garlic powder, and green onions.
- Once the potatoes are crispy, toss them in the dressing and add the crumbled turkey bacon and chicken ham.
- Serve warm or at room temperature.
