  • 4 strips turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup green onions, chopped
  • 1/4 cup parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the baby potatoes in salted water until tender.
  2. Preheat the oven to 425°F (220°C).
  3. Drain the potatoes and let them cool slightly. Then smash each potato gently.
  4. Cook the turkey bacon until crispy, then chop it into pieces.
