Creamy Tuscan Ravioli Soup

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 12 ounces cheese ravioli
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in garlic and cook for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, add heavy cream and ravioli, and simmer until ravioli are cooked.
  6. Stir in Italian seasoning and fresh spinach, cooking until spinach wilts.
  7. Season with salt and black pepper to taste.
  8. Serve hot.
