  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 2 boiled eggs, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool, then peel and dice.
  2. In a skillet, cook the turkey bacon until crispy. Let cool, then crumble.
  3. In a large bowl, combine the diced potatoes, turkey bacon, chicken ham, mayonnaise, Dijon mustard, celery, red onion, boiled eggs, salt, and pepper.
  4. Mix gently until well combined. Adjust seasoning if necessary.
  5. Cover and refrigerate for at least 1 hour before serving.
