Cranberry Orange Muffins with Streusel Topping

Deliciously tart and sweet cranberry orange muffins topped with a crunchy streusel.

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries
  • 3/4 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together orange juice, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, then gently fold in the cranberries.
  5. In a small bowl, mix oats, brown sugar, and cinnamon for the streusel topping.
  6. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Sprinkle the streusel mixture on top of the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool slightly before serving.

Notes

  • These muffins can be enjoyed warm or at room temperature.
  • Great for breakfast or as a snack!
