Comforting Potsticker Soup

A warm and hearty potsticker soup perfect for chilly nights.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 4 cups chicken broth
  • 1 package potstickers
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the potstickers to the pot and cook for 5-7 minutes.
  5. Stir in the bok choy, green onions, soy sauce, and sesame oil. Cook for an additional 2-3 minutes.
  6. Serve hot.

Notes

  • For extra flavor, add a splash of rice vinegar.
  • Top with additional green onions if desired.
