These Coffee Cake Muffins are the perfect combination of fluffy cake and crumbly topping, ideal for breakfast or a sweet snack!

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs, sour cream, and vanilla extract. Mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, combine brown sugar and cinnamon to create the crumb topping.
  7. Fill each muffin cup halfway with batter, sprinkle with crumb topping, then add more batter until full, and top with remaining crumb mixture.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool slightly before serving.
