  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients.
  5. If using, fold in the chopped nuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Sprinkle cinnamon sugar generously over the tops of the muffins.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
