- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/2 cup brown sugar
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter.
- Mix in the baking soda and salt.
- Add the sugar, egg, and vanilla extract, and mix until combined.
- Gradually add the flour and stir until just combined.
- In a separate bowl, mix the ground cinnamon and brown sugar.
- Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon sugar mixture, then top with the remaining batter and finish with the rest of the cinnamon sugar.
- Bake for 60-65 minutes, or until a toothpick comes out clean.
