Cinnamon Roll Muffins

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and 1 teaspoon cinnamon.
  3. In another bowl, combine melted butter, milk, egg, and vanilla. Stir this mixture into the dry ingredients until just combined.
  4. In a small bowl, mix brown sugar and remaining cinnamon. Fold half of the muffin batter into the prepared muffin tin, sprinkle with cinnamon sugar mixture, and cover with remaining batter.
  5. Bake in the preheated oven for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  6. While muffins cool, whisk together powdered sugar and milk until smooth and drizzle over cooled muffins.

Notes

  • Store any leftover muffins in an airtight container.
  • These muffins freeze well, so make a double batch!
