  • 1 head cabbage, chopped
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 bay leaf

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the onions, carrots, and celery, and sauté until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the chopped cabbage, vegetable broth, salt, pepper, oregano, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove the bay leaf and serve hot.
