  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter over medium heat until it turns brown, then remove from heat.
  3. In a large bowl, mix the brown butter, brown sugar, and granulated sugar until combined.
  4. Add in the pumpkin puree, eggs, and vanilla, mixing until smooth.
  5. In another bowl, combine the oats, flour, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Drop tablespoons of cookie dough onto a baking sheet lined with parchment paper.
