  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a saucepan, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy.
  4. In a large bowl, combine cooked quinoa with cranberries, pecans, feta, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  6. Pour dressing over salad and toss to combine.
  7. Serve chilled or at room temperature.
