Apple Pumpkin Streusel Muffins

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1 cup diced apples
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the dry ingredients.
  3. In another bowl, combine the wet ingredients and then add to the dry mixture.
  4. Fold in the diced apples and walnuts.
  5. Pour the batter into a greased muffin tin.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

  • For extra flavor, add a pinch of cloves or allspice.
  • You can substitute walnuts with pecans if desired.
