Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla; beat until fluffy.
  4. In another bowl, mix the oats, flour, cinnamon, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. Fold in the diced apples and walnuts, if using.
  7. Drop spoonfuls onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks.
