Apple Cider Pork with Mashed Sweet Potatoes Recipe

Delicious apple cider pork served with creamy mashed sweet potatoes.

  • 2 pounds pork tenderloin
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large sweet potatoes
  • 1/4 cup butter
  • 1/2 cup milk

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the pork and sear on all sides.
  2. Remove pork and add the onion and garlic to the skillet, cooking until softened.
  3. Return the pork to the skillet, pour in the apple cider and season with salt and pepper. Cover and simmer until cooked through.
  4. Meanwhile, peel and chop sweet potatoes. Boil until tender, then drain.
  5. Add butter and milk to the sweet potatoes and mash until smooth.
  6. Serve the pork with the mashed sweet potatoes on the side.

Notes

  • For additional flavor, marinate the pork in apple cider overnight.
