  • 1 cup apple cider
  • 2 tablespoons Dijon mustard

  • 4 medium sweet potatoes
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix apple cider, Dijon mustard, salt, and black pepper.
  3. Place pork loin in a baking dish and pour the apple cider mixture over it.
  4. Bake for about 1 hour or until the internal temperature reaches 145°F (63°C).
  5. While the pork is baking, peel and chop sweet potatoes. Boil until tender.
  6. Drain sweet potatoes and mash with milk, butter, cinnamon, and nutmeg.
  7. Slice the pork and serve with mashed sweet potatoes.
